Not sure since I haven't used that before, but I have used tables that were related tables to my data that I queried.  There is a backwards way of converting the values a few times as I query several times to query the final table for the results.  I have on a number of occasions messed up and gotten the table in the results without the selected layer, so I assume it is possible to show a result list of non spatial data.  If you add the table to the map service, I don't see why it couldn't be queried.  I found out that it didn't need to be related at all to my data to be used in the workflow as long as it was in my service.  If you want me to post my workflow queriying the related table, let me know.

I am going to try the related table approach instead. If you could post a copy of your workflow, I would appreciate it.

    Thanks!
