Best practice for updating/changing/setting value.

Currently I'm using Create Values activity options to create values. However, when branching the logic I'd like this variable/Value to get updated. I do not see any way to generically change a value once its set, so updating it like a variable seems difficult. I'm sure I'm missing something simple, so I'm wondering what the best way to change a value is?

e.g.,

I use Create Value to create a blank string value of '' (two quotes). I now want to simply update it to the string, 'updated' in the next step. Is it possible to update this way with an activity? I tried using Set Properties activity, but the Create Value activity doesn't appear to create a valid object to update.

  I originally did this process but did get the error I mentioned above... however, when redoing in an empty sandbox tool the behavior worked as expected. Your screenshot helps confirm as well, appreciate it.
  
  With the sandbox working the issue was obviously on my end so I'll go back and check other things. The Set Property activity does exactly what I wanted in these scenarios. Thanks!
