I would be interested in the ability to have sites managed in folder in the rest manager, especially now that site inheritance is in place which creates hierarchical relationship that could be more organized well in folders.  For instance, in rest manager when we see the list of sites, if we could have folder creation available.  Ideally I would like to have folders for root/parent sites and then a folder for derived sites which inherit from the parent sites.

  I agree. When you have a large number of sites, it would be very useful to be able to organize them in a folder structure (by client, dev/production, etc.), just like you would map layers within a site.
