Is Geocortex Essentials required for 5 series i.e., if we need to migrate to Geocortex Web Viewer as opposed to Viewer for HTML 5, do we require Geocortex Essentials for configuring and hosting the site?

In short, no.
As long as the functionality of the 5-series products (Geocortex Web, Geocortex Mobile, Geocortex Workflow, Geocortex Reporting, Geocortex Printing) has sufficient functionality to meet your needs; you do not need to install the 4.x Geocortex Essentials.
Unlike The Geocortex Viewer for HTML5 that was a client-server based viewer, Geocortex Web is architected to be serverless. Once a client connects to the application and downloads the Geocortex Web code tot he client everything runs client side (the application is still making requests to Esri map service endpoints). This allows us, for example, to distribute the Geocortex-managed SaaS version of Geocortex Web as a high-speed, high-capacity, CDN delivery.
As an example. This URL based on our Geocortex-managed SaaS points to a single Esri portal item with the app configuration needed to run the application.
