How do I execute a find-and-replace for text within a legend control?

I have a table that joins the text in the Essentials Layer List to the text desired in the Printing Legend output, but am lost on how to go about the switch.  Should I use the Text expression of the Legend control or should I use a script to run before that control draws?  And how would I go about iterating legend entries and binding to their titles?
