Plugging the “extract” workflow in the Geocortex application,
The “extract” workflow comes by default with the Geocortex and stored in the location below
C:\Program Files (x86)\Latitude Geographics\Geocortex Essentials\Default\REST Elements\Sample Sites\Resources\Workflows
The issue here is that there is a confusion in choosing the appropriate ESRI geoprocessing tool that fits this work flow:
Is it ““extract data task” tool?
Or “extract data”?

Neither, actually...
You need to edit the Extract Data and Email Task (Server) model. This is the one below your two red boxes. Follow the ESRI instructions to configure your Email environment and parameters in the model.
After you do this, you run this model on a project that contains layers from your map service. You need to make sure that everything is spelled identical, or they won't show up in your extract layers list.
Run the model in your project succesfully, then publish it as a geoprocessing service.
Then you can use the geoprocessing endpoint where it is referenced in the workflow.

But by default, we have other workflow which is “ExtractAndEmail.xaml” and stored in the location below:
C:\Program Files (x86)\Latitude Geographics\Geocortex Essentials\Default\REST Elements\Sample Sites\Resources\Workflows
Then what is the difference between “Extract.xaml” and “ExtractAndEmail.xaml”?
