modify symbology in workflow

is there a way to change a layers symbology in workflow, for example i want to change the symbol fill color to red from the current color. ( I can change the color interactively, but need to change it in workflow programatically.)

  How about publishing it as a feature service and editing an attribute that controls the fill color?  Like a color field that you could change the value from "red" to "blue" ?  The MXD layer symbol property would be set to display different colors on that field.

  i was hoping for a programmatic solution, though a field might work. right now, i cannot modify the schema of the features in my mxd.  i will look into setting a custom renderer??? i may not be able to do what i needed here, and i am looking at plan b!
