Show coded domain values while editing attributes in Viewer

I found a couple posts that touched on this issue, but neither answered the question. This one (https://support.geocortex.com/essentialsGSCForum?sub-nav=forum&main-nav=essentials&#!/feedtype=SINGLE_QUESTION_DETAIL&criteria=ALLQUESTIONS&id=90660000000GuARAA0) from Tim De Muynck is the issue exactly, except his is from 2017 using Essentials 4.5.1 and Viewer 2.6.1 and we're having this issue even now.
This older post (https://support.geocortex.com/essentialsGSCForum?sub-nav=forum&main-nav=essentials&#!/feedtype=SINGLE_QUESTION_DETAIL&criteria=ALLQUESTIONS&id=906600000000AxWAAU) mentions it as well, and Amanda from Latitude mentions in her response there's a way to "configure edit-permissions on the field level". I haven't figured out how to do this though. In the help for Fields in the admin guide I found this under Settings:
Show Code Fields from Coded Domains: This setting applies only to legacy Silverlight viewers and HTML5 viewers 2.5.2 or older, from sites that have the Geocortex Services Enhancement Proxy configured.
Neither of these situations applies to us though. Any pointers would be appreciated
